Meal Plan Monday #4

Last week started off great with the healthy eating and ended in failure! We had family visit later in the week and it totally threw me off track. So, even though we’re traveling this weekend, I plan to make this week as healthy and on track as possible. So first things first, I’m throwing out ALL the junk food and sweets! This is what’s throwing me off track so if you’re in the same boat as me and trying to lose that Corona 5, my advice to you is find out what’s getting you off track and get rid of it. Out of sight, out of mind! Next advice I have for you is to MEAL PREP! Even if it’s just one thing that you can eat throughout the week. So this week I think I’m going to make my Mason Jar Egg Casseroles because they’re easy to make and easy to reheat during the week and super delicious! They fill my belly and help me get my day off on the right foot. I also plan on boiling some eggs and making a healthy egg salad for lunches. So now that breakfast and lunches are set, let’s talk dinner…

Monday:

Easy Chicken Kebabs on the grill By Cooktoria *I will probably add some onions and maybe some pineapple to the skewers as well

Tuesday:

Healthy Beef Stir Fry By Dish On Sea *I’ll serve this over brown rice for Zach and the kids and over lettuce to make a lettuce wrap for myself

Wednesday:

Breakfast for Dinner! We will most likely have bacon, turkey sausage, eggs, and a little sauteed zuchini. The plan is NO SUGAR (except in my coffee this week) this week, so for a mid-week reward to myself I think I’ll whip up this yummy Peanut Butter Banana NICE Cream. I cannot wait to try this!

Thursday:

Leftovers so that we can get rid of everything before we go out of town.
