Mom’s Famous Chili

Fall is upon us, and to me there’s nothing better on a cool day than a warm bowl of hearty chili! How about you? There’s something so comforting about chili. Maybe it is the fact that I grew up eating this and it brings back happy childhood memories, or maybe it’s the fact that it was one of the first meals I ever learned how to make. Either way, it is a go-to staple meal in our family and we eat it year-round. It also freezes really well, so I will often make a huge batch and freeze half of it for a later meal. When I make this soup, we usually eat it as a soup the first night with Fritos, cornbread or crackers, then the next night we will eat it like “Chili Pie.” If you haven’t tried chili pie it’s basically taco salad but with Fritos and chili instead of lettuce and taco meat. You start with a bed of scoops Fritos, then add chili, cheese, onions, tomatoes, salsa, sour cream, jalapeños, whatever your heart desires. It’s SOOO delicious and a definite crowd pleaser. Ingredients
 1 lb ground beef (or ground turkey)
 1 onion, chopped
 1 green bell pepper, chopped
 2 cans of chili beans
 1 28 oz can crushed tomatoes
 1 can of rotel tomatoes
 1 15 oz can corn
 1 15 oz can tomato sauce
 1 tbsp Worcestershire sauce
 ¼ tsp liquid smoke
 3 to 4 tbsp chili powder
 ½ tsp garlic powder
 salt and pepper to taste

Directions

In a large stock pot brown ground beef with onions and peppers. Drain. Add the remaining ingredients and simmer on stove for 1 hour. Serve with cheese. Enjoy!

This recipe freezes really well!
