Vanilla Chia Seed Pudding

I know, I know, “chia seeds, that’s weird food!” I get it, I used to say the same thing, but that was before I really gave chia seeds a chance. I didn’t know a seed could taste this good! I’ve been having this pudding as a little before bed treat at night and I’m loving it! This chia seed pudding really does taste like a tapioca pudding and it’s so filling! It’s also so versatile because you can add whatever toppings you like to it (cocoa powder, chocolate chips, fresh fruit, peanut butter, coconut, nuts, dried fruit, the possibilities are endless! And the best part? It’s SOOO easy and quick to make! Here’s the ingredients you need to make it: Just 4 ingredients! I told you it was easy! Now here’s how you make it…in a small mason jar mix 3/4 cup of unsweetened almond milk, 1 tbsp maple syrup, 1 tsp vanilla extract, and 4 tbsp of chia seeds (I prefer the white ones. You can find them on amazon here). Mix well with a fork and put in fridge overnight. Add toppings and enjoy! It will last in fridge up to a week. See, told ya it was easy!! XOXO, Anna
