Cajun Chicken Alfredo with Zoodles

I’m finally sharing our family’s number one favorite recipe!! It’s my famous chicken alfredo and it’s not only super easy to make, it’s so delicious and if you use zoodles instead of noodles, it’s also healthy! For Zach and the kids I usually make some whole wheat noodles and for myself I use a spiralizer and make squash and zucchini noodles. You really can’t even tell the difference!

 1 lb boneless, skinless chicken breasts
 cajun seasoning
 ½ cup butter
 8 oz cream cheese
 2 tsp galic powder
 2 cups milk
 ¾ cup parmesan cheese
  tsp pepper
 1 tsp olive oil
 2 squash for noodles
 2 zuchini for noodles

Chicken directions:

Line a pan with foil and spray with cooking spray. Place chicken breasts in pan and sprinkle both sides with cajun seasoning. Bake on 350 for 45 minutes. Let cool, cut into bite size pieces.

Sauce directions:

In a large skillet over medium heat melt butter and cream cheese. Add garlic and whisk until smooth. Add milk gradually. Stir in parmesan and pepper and cook until cheese is melted and mixture has thickened.

Zoodle directions:

For zucchini and squash noodles use a spirilizer to make noodles. In a small skillet, heat olive oil on medium heat. Add noodles and cook until tender (about 7 minutes). Drain noodles using a colander. When you’re ready to serve, place zoodles in a bowl and top with sauce then top with chicken.
